Instructions

  1. 1Melt butter in a large pot over medium heat. Add onion and cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  2. 2Stir in the diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer for 12-15 minutes until the potato is tender.
