Cauliflower: Roasting gives cauliflower a deeper, slightly sweet and nutty flavor. I tried to boil or even steam cauliflower before; it stays much milder and can make the soup taste a little watery.

Garlic: Roasting whole garlic cloves makes them soft, sweet, and mellow instead of sharp. Once cooled, I squeeze the garlic from the skins and stir the soft paste right into the soup.

Heavy cream: Adding a little heavy cream at the end makes the soup smooth, rich, and silky. You can leave it out, but the soup won’t be quite as creamy or comforting.

Fresh thyme adds a light, earthy, herby flavor that works really well with roasted cauliflower. Dried thyme also works, but fresh thyme gives the soup a brighter flavor and aroma.

Tips to Make It Perfect

Roast until the cauliflower actually browns: Don’t stop when the cauliflower is just lightly golden. Roast it until the edges are deeply browned because that extra caramelization gives the soup much more flavor.

Blend hot soup carefully: Hot soup can expand quickly in a blender. I only fill the blender halfway, blend in batches, and leave the lid slightly vented with a towel over the top.

Add the cream after blending: Stir in the heavy cream at the end instead of blending it for too long. This keeps the soup smooth and creamy without making the texture feel heavy or overworked.

Instructions

  1. 1Preheat the oven to 425°F (220°C).
  2. 2Toss the cauliflower florets, onion, and garlic cloves with the olive oil, salt, and pepper on a large baking sheet. Roast for 30 to 35 minutes, stirring once, until deeply golden and caramelized at the edges.
  3. 3Let the garlic cool slightly, then squeeze the softened cloves out of their skins.
  4. 4Transfer the roasted vegetables to a large pot. Add the vegetable broth and thyme. Bring to a simmer and cook for 10 minutes.
  5. 5Use an immersion blender to puree the soup until smooth, or blend in batches in a countertop blender.
