- 4 tbspbutter
- 2large egg yolks
- 1/4 cupmilk
- 1/4 tspground nutmeg
- 1/2 tspsalt
- 1/4 tspblack pepper
- 1egg (beaten with 1 tbsp water, for brushing)
Instructions
- 1Place potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15-18 minutes until fork-tender. Drain well.
- 2While potatoes cook, preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- 3Pass the drained potatoes through a ricer or mash very smooth. Stir in the butter, egg yolks, milk, nutmeg, salt, and pepper until fully combined and smooth.
