Ingredients
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 3 cups chicken or vegetable broth
- 1 cup milk or cream
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions
- Melt butter in a pot over medium heat.
- Add onion and cook 3–4 minutes until softened.
- Add garlic and cook 30 seconds.
- Stir in potatoes and broth. Bring to a boil.
- Reduce heat, cover, and simmer 12–15 minutes until potatoes are tender.
- Use a masher or immersion blender to thicken the soup to your preferred consistency.
- Stir in milk or cream, salt, and pepper. Simmer 2 more minutes.
- Taste and adjust seasoning.
- Serve warm with chives or cheddar if desired.
