Ingredients

  • 2 lb chicken wings, split into flats and drumettes
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon honey
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil, then place a wire rack on top for extra crispiness.
  2. Pat the chicken wings completely dry with paper towels. This step is important for getting crispy skin.
  3. In a large bowl, toss the wings with baking powder, salt, garlic powder, onion powder, paprika, and black pepper until every piece is evenly coated.
  4. Drizzle in the olive oil and toss again so the seasoning sticks well.
  5. Arrange the wings in a single layer on the wire rack, leaving a little space between each piece.
  6. Bake for 20 minutes, then flip the wings and bake for another 18–20 minutes until golden brown, crispy, and cooked through.
  7. While the wings bake, make the cilantro lime glaze by mixing melted butter, lime juice, lime zest, chopped cilantro, honey, and chili flakes in a small bowl.
  8. Transfer the hot wings to a clean mixing bowl. Pour the cilantro lime glaze over the wings and toss until evenly coated.
  9. Serve immediately for the best crispy texture and fresh flavor.
