Fresh orange segments bring the juicy sweetness that balances the richness of the avocado. Canned mandarin oranges are too soft and syrupy. You want segments that hold their shape and burst with juice when you bite into them.

Lime juice adds a sharper citrus note that keeps the dressing from tasting flat. I don’t use lemon juice because lime has that distinct brightness that pairs naturally with avocado.
Honey: Just a teaspoon rounds out the acid in the dressing without making it sweet.
Tips to Make It Perfect
Dice the avocado last: It starts browning the moment it’s exposed to air. If you prep everything else first and cut the avocado right before assembling, it stays green and fresh.
Remove all the pith from the citrus segments: That white membrane tastes bitter and ruins the clean citrus flavor you’re going for.
