  • 10 cupsplain popped popcorn (about 1/2 cup unpopped kernels)
  • 6 slicesbacon, cooked and finely chopped
  • 1/2 cupunsalted butter
  • 1 cupbrown sugar, packed
  • 1/4 cupcorn syrup or honey
  • 1/2 teaspoonsalt
  • 1/4 teaspoonbaking soda
  • 1 teaspoonvanilla extract

Instructions

  1. 1Preheat oven to 120°C / 250°F. Line a large baking sheet with parchment paper.
  2. 2Place popcorn in a very large bowl. Remove all unpopped kernels. Add chopped bacon and toss to mix evenly.
  3. 3In a saucepan over medium heat, add butter, brown sugar, corn syrup, and salt. Stir until butter melts.
  4. 4Bring to a boil. Once boiling, stop stirring and let it boil for exactly 4 minutes.
  5. 5Remove from heat. Immediately stir in vanilla, then baking soda. The caramel will foam up.
