Potato Twisters (Tornado or Spiral Potatoes)

I love spiral potatoes at a fair or street food stand; you know how tempting they look! You can bring that same fun idea into your kitchen with Potato Twisters.

Crispy potato twisters, sprinkled with black pepper and paprika

The potatoes are cut into a long twist, seasoned, and cooked until golden on the outside while staying soft inside. You can keep the seasoning simple with salt and pepper. I like to add a little spice for extra flavor. They look impressive but are easier to make at home than you might think.

Potato Twister Recipe

Key Ingredients

Russet potatoes have a starchy interior that gets crispy on the outside while staying soft inside. I use medium potatoes, around 8 ounces each, so the spirals are a good length for the skewers.

Garlic powder and smoked paprika give the twisters a savory, slightly smoky flavor. I sprinkle the seasoning on right after frying while the potatoes are still hot, so it sticks.

Tips & Tricks

Soak, then dry completely: Soaking the twisters in cold water for 10 minutes rinses off surface starch. Patting them dry afterward keeps the oil from splattering. You can dust lightly with 1 teaspoon of cornstarch before oiling.

How to make Spiral potatoes

Keep gaps open and don’t crowd: Ensure the spiral layers are stretched out so air can circulate between them. I only cook 1–2 skewers at a time so they don’t touch each other or the basket walls.

Use a two-stage heat blast: Cook at 350°F (175°C) to cook the interior through without burning, then crank the heat to 400°F (200°C) for the final 4–5 minutes to blister and crisp the edges.

Ingredients

Servings:
4
US Metric
  • Potato Twisters
  • 4medium russet potatoes (about 8 oz each, scrubbed and peeled)
  • 4wooden skewers (10 to 12 inches long)
  • 2 tablespoonsvegetable or olive oil (for brushing)
  • 1 teaspooncornstarch (optional, for extra crispness)
  • Seasoning
  • 1 teaspoonsalt
  • 1/2 teaspoongarlic powder
  • 1/2 teaspoonsmoked paprika
  • 1/4 teaspoonblack pepper

Instructions

  1. 1Push a skewer lengthwise through the center of a potato. Place two chopsticks (or skewers) on either side of the potato on a cutting board so the knife can't cut all the way through.
  2. 2Hold a small sharp knife at a 45-degree angle against the potato. Roll the potato toward you as you cut, pressing the knife down until it hits the chopsticks, in one continuous spiral from one end to the other. Repeat with the remaining potatoes.
  3. 3Gently pull each potato along the skewer to stretch the spiral to about 5 to 6 inches long.
  4. 4Use kitchen scissors to trim each skewer to about 8 inches long so the twisters fit in the air fryer basket.
  5. 5Soak the twisters in cold water for 10 minutes, then drain and pat very dry with paper towels.
  6. 6Dust the twisters lightly with the cornstarch, if using.
  7. 7Preheat the air fryer to 350°F (175°C) for 3 minutes.
  8. 8Brush the oil all over each twister, getting between the layers of the spiral.
  9. 9Place 2 twisters in the basket in a single layer, making sure they do not touch each other or the basket walls. Air fry at 350°F for 15 to 18 minutes, turning halfway, until the potatoes are tender inside.
  10. 10Increase the heat to 400°F (200°C) and air fry for 4 to 5 more minutes, until deep golden brown and crisp at the edges. Repeat with the remaining 2 twisters.
  11. 11Mix the salt, garlic powder, paprika, and pepper, and sprinkle over the hot twisters right away. Serve hot.

📌 Notes

  • Pat the potatoes completely dry before brushing with oil so they crisp up.
  • Cook in batches so the hot air can reach every side of the twisters.
  • Air fryers vary, so check the twisters at 15 minutes.
  • A thin, even spiral about 1/4 inch thick cooks through and crisps best.
  • Serve with ketchup, ranch, or cheese sauce for dipping.

How to Pair

You’ll need creamy dips, hearty mains, and cold drinks to balance the crunchy texture and savory flavor of potato twisters. Here are my suggestions:

  • Serve them with garlic aioli, spicy ketchup, or cool ranch dip for an easy snack.
  • Pair them with grilled burgers, fried chicken, or barbecue ribs for a filling meal.
  • Enjoy them with lemonade, iced tea, or a chilled lager to refresh the palate.
