Duchess Potatoes: Easy and Creamy

Duchess Potatoes are an elegant potato side dish made with creamy mashed potatoes, butter, and egg yolks, then piped into beautiful little swirls and baked until golden.

Easy Duchess potatoes recipe

The dish gives mashed potatoes a more elegant presentation without making them complicated. It’s a great choice for holiday meals, Sunday dinners, and small celebrations. I can pipe them ahead of time, then bake them just before serving.

Key Ingredients

Russet potatoes: Russets mash up smooth and fluffy without holding too much moisture, which makes them ideal for piping. Waxy potatoes can be a little wetter and may not hold their shape as well in the oven.

Duchess potato ingredients

Egg yolks add richness and help the potatoes hold their shape once baked. Using just the yolks keeps the mixture smooth and rich without making it too light or airy.

Butter gives the potatoes a rich, creamy flavor without adding extra liquid. I add it while the potatoes are still hot so it melts in completely.

Tips & Tricks

Mix in the butter and yolks just until smooth: Overmixing can make the potatoes gluey and harder to pipe. I mix mine by hand and stop as soon as everything comes together.

Pipe the rosettes about the same size: Smaller ones will brown faster than larger ones, so try to keep them fairly even. You should keep the pressure steady as you pipe and lift the bag straight up at the end.

📌 Notes

  • Passing the potatoes through a ricer gives the smoothest texture; lumps are harder to pipe evenly.
  • Let the mashed potato mixture cool slightly before piping so it holds its shape better.
  • No piping bag? A large zip-top bag with the corner snipped off works just as well.

How to Pair

Duchess Potatoes taste buttery, creamy, and lightly savory, with crisp golden edges. They suit rich meats, roasted vegetables, and fresh sides that balance their smooth texture. I suggest pair the side with:

Golden, creamy Duchess potatoes on the plate
  • Roast beef, herb-roasted chicken, or glazed ham for a comforting holiday meal.
  • Green beans, roasted asparagus, or honey-glazed carrots for color and freshness.
  • Add mushroom gravy, red wine sauce, or creamy peppercorn sauce for extra richness.
