Ingredients

  • 2 cups frozen green peas
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 small garlic clove
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a small pot of water to a boil. Add the frozen peas and cook for about 2 minutes until bright green and tender. Drain well and let them cool for a minute.
  2. Add the cooked peas, feta cheese, olive oil, Greek yogurt, lemon juice, and garlic to a food processor.
  3. Blend until mostly smooth. Scrape down the sides if needed so everything blends evenly.
  4. Add salt and black pepper. Blend again briefly until the dip becomes creamy but still slightly textured.
  5. Taste and adjust with a little more lemon juice or feta if you want extra brightness or saltiness.
  6. Transfer to a serving bowl. Drizzle a little olive oil on top and sprinkle with chopped parsley if desired.
