Ingredients

  • 400 g (14 oz) mozzarella balls or cubed mozzarella
  • 1/3 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried basil (or 1 tbsp fresh, chopped)
  • 1/2 tsp chili flakes (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh parsley, chopped (optional but recommended)

Instructions

  1. Drain the mozzarella well and pat dry with paper towels to remove excess moisture.
  2. If using a large block, cut mozzarella into bite-sized cubes (about 2–3 cm).
  3. In a bowl, combine olive oil, oregano, basil, chili flakes, black pepper, salt, and minced garlic. Mix well.
  4. Add the mozzarella cubes to the marinade and gently toss until fully coated.
  5. Transfer to a container or jar, cover, and refrigerate for at least 1 hour (preferably 4–8 hours for deeper flavor).
  6. Before serving, let it sit at room temperature for 10–15 minutes so the oil loosens and flavors bloom.
  7. Sprinkle with fresh parsley and serve with bread, crackers, or as part of a platter.
