Shredded mozzarella: Freshly shredded melts smoother and stretches better than pre-shredded from a bag. The anti-caking coating on bagged cheese stops it from melting into that gooey, bubbly layer you want on top.
Mini pepperoni: Regular pepperoni slices are too big for these small cups and hang over the edges. Mini pepperoni fits perfectly, two per bite, and the edges crisp up and curl during baking.

Flatten each biscuit before pressing into the tin: Straight from the can, biscuits are too thick to form a proper cup. I flatten each one to about 4 inches wide so it covers the bottom and sides of the muffin cup evenly. Don’t skip this, or the bottom is too thick while the sides are too thin.
