Jalapeño keeps the dip from feeling heavy and one-note. If you skip it, the dip will taste flat and heavy. I seed mine completely for mild heat but if you want more kick, leave a few seeds in.
Cream cheese is the base that holds everything together and gives the dip its thick, scoopable body. Without it, mayonnaise alone is too loose and the dip slides off every cracker.
Tips to Make It Perfect
Soften the cream cheese completely before mixing: Cold cream cheese creates stubborn white lumps that never fully disappear no matter how much you stir. I pull it from the fridge at least 30 minutes early. You should be able to press a finger into it easily before it goes in the bowl.

Shred your own cheddar from a block: Pre-shredded cheese is coated in cellulose and starch to prevent clumping in the bag, but that coating prevents it from melting smoothly into the dip. I’ve compared them side by side and the block-shredded version is noticeably creamier.
Let it chill for the full 30 minutes: Eating it immediately after mixing is fine, but the flavors haven’t had time to come together yet. After 30 minutes in the fridge, the whole thing tastes like one cohesive dip instead of separate ingredients.
