Key Ingredients

Lump crab meat: Lump crab holds its shape in the oven, so the dip still has real pieces of seafood in every warm scoop. Claw meat is cheaper but it breaks down under heat and disappears into the cheese, and by the time the top browns you can barely tell it’s a crab dip.

Cream cheese: In a baked dip, cream cheese is what keeps everything stable in the oven. Sour cream on its own separates under heat and you end up with a greasy, broken mess. The cream cheese anchors the base so the texture stays thick and creamy from the first scoop to the last.

Sharp cheddar: This does double duty here: flavor in the base and that golden, bubbly crust on top. Mild cheddar melts the same but tastes like nothing next to the crab. The sharpness is what keeps a rich, hot dip from feeling one-note halfway through the bowl.

Tips to Make It Perfect

Don’t overbake the dip: Pull it from the oven the moment the edges start bubbling and the cheese on top turns golden. Leaving it in too long dries out the cream base and the texture goes from silky to grainy.

Fold the crab in gently as the last step: The whole point of using lump crab is the big, flaky pieces. Stirring aggressively shreds them into bits and you lose the texture that makes this dip worth making. I use a spatula and fold no more than 5 or 6 times.

Serve it hot, straight from the oven: This dip is at its best during the first 20 minutes out of the oven while the cheese is still bubbly and the inside is warm. Once it cools down, the cream base firms up and it loses that luxurious, melty texture.

  • ½ cupsour cream
  • 1 cupshredded sharp cheddar cheese
  • 8 ozlump crab meat (drained and picked through for shells)
  • 1 tablespoonfresh lemon juice
  • 1 teaspoonOld Bay seasoning
  • 1 teaspoonWorcestershire sauce
  • ½ teaspoongarlic powder
  • ¼ teaspoonblack pepper
  • 2 tablespoonsfresh chives (finely chopped)

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large bowl, beat the softened cream cheese and sour cream together until smooth.
  3. 3Stir in the lemon juice, Old Bay seasoning, Worcestershire sauce, garlic powder, and black pepper.
  4. 4Gently fold in the crab meat and three quarters of the shredded cheddar, being careful not to break up the crab lumps.

📌 Notes

  • Check the crab meat carefully for shell fragments before mixing. Run your fingers through it twice.
  • Soften the cream cheese to room temperature. Cold cream cheese creates lumps that won't bake out.
  • Don't overbake or the dip dries out. Pull it when the edges bubble and the top just starts to turn golden.
  • This reheats well in the oven at 350°F for 10 minutes. Avoid the microwave as it separates the cream base.
