Breadcrumbs create the crunchy shell that makes these bites addictive. Regular breadcrumbs work, but panko gives an even louder crunch. I mix parmesan right into the crumbs so every bite has cheese flavor baked into the coating.
Parmesan cheese: Mixed into the breadcrumb coating, it adds a salty, nutty depth that plain breadcrumbs can’t deliver. You can use finely grated so it distributes evenly instead of clumping.
Tips to Make It Perfect
Let the gnocchi cool after boiling before you coat them: Wet, hot gnocchi won’t hold the breadcrumbs. The egg wash slides off and you end up with bare patches that don’t crisp. Drain and let them sit for a few minutes until they’re dry to the touch.

Don’t crowd the pan: If the gnocchi touch each other, the coating steams instead of frying and you get soft, pale spots. I cook in two batches so every piece sits flat in the oil.

Ingredients
- 1 lbshelf-stable potato gnocchi (450 g)
- 1/2 cupbreadcrumbs
- 1/4 cupgrated parmesan cheese
- 1egg
- 2 tablespoonsmilk
- 1/2 teaspoongarlic powder
- 1/4 teaspoonsalt
- 1/4 teaspoonblack pepper
- 1/4 teaspoonpaprika (optional)
- 3 tablespoonsolive oil (for frying)
- 1 tablespoonchopped parsley (optional)
Instructions
- 1Bring a pot of water to a boil. Add the gnocchi and cook according to the package instructions, about 2–3 minutes, until they float.
