Ingredients
- 2 cups mashed potatoes (cooled)
- 1 large egg
- 1/3 cup all-purpose flour
- 1/4 cup grated cheddar cheese
- 2 tablespoons green onions, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 3 tablespoons vegetable oil (for frying)
Instructions
- Place the mashed potatoes in a large bowl. Break up any large lumps so the mixture is smooth.
- Add the egg, flour, cheddar cheese, chopped green onions, salt, black pepper, and garlic powder.
- Mix everything together until a thick dough forms. The mixture should hold its shape when scooped. If it feels too soft, add 1–2 tablespoons of flour.
- Scoop about 2 tablespoons of the mixture and shape it into a small patty about 1/2 inch thick.
- Heat vegetable oil in a large skillet over medium heat.
- Place the patties in the skillet without overcrowding the pan.
- Cook for 3–4 minutes on each side until golden brown and crispy.
- Transfer the fritters to a plate lined with paper towels to remove excess oil.
- Serve warm for the best texture.
