This season, I’m switching things up with Carrot Casserole instead of the typical roasted carrots. It is a simple baked side dish featuring tender carrots combined with a rich, flavorful sauce.

  • 1/2 cupPanko breadcrumbs (or crushed crackers)
  • 3 tbspunsalted butter (melted)

Instructions

  1. Make the Carrot Mixture
  2. 1Place carrot slices in a large pot, cover with water, and boil for 15-18 minutes until very tender. Drain well.
  3. 2Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish. Mash or puree the drained carrots until smooth.
  4. 3Mix the shredded cheese into the warm mashed carrots before adding the eggs, so it melts evenly.
  5. 4Stir the sugar, eggs, melted butter, heavy cream, baking powder, garlic powder, black pepper, and salt into the mashed carrots until well combined.
  6. 5Pour the carrot mixture into the prepared baking dish and spread evenly.
  7. Add the Topping and Bake
  8. 6In a separate small bowl, combine the panko breadcrumbs and 40g melted butter. Mix until it forms loose, buttery crumbs.
