Ingredients

  • 1 lb (450 g) fresh asparagus, trimmed
  • 6 slices bacon
  • 1/4 cup red onion, finely diced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups lettuce, chopped (optional)

Instructions

  1. Bring a pot of salted water to a boil. Add the asparagus and cook for 2–3 minutes until bright green and slightly tender.
  2. Immediately transfer the asparagus to a bowl of ice water to stop the cooking. Let it cool for about 1 minute, then drain and pat dry.
  3. Cut the asparagus into 2-inch pieces and place them in a large mixing bowl.
  4. In a skillet over medium heat, cook the bacon until crispy, about 6–8 minutes.
  5. Transfer the bacon to a paper towel-lined plate to drain, then chop it into small pieces.
  6. Add the chopped bacon, diced red onion, lettuce (if using), and halved cherry tomatoes to the bowl with the asparagus.
  7. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper until smooth.
  8. Pour the dressing over the salad and toss gently until everything is evenly coated.
  9. Serve bacon asparagus salad immediately for the best texture.
