Carrots: Smoothly blended carrots give this casserole its soft, custard-like texture. I blend mine right in the pot with an immersion blender so there are no lumps.
Eggs help bind everything together and give the carrot mixture enough structure to set in the oven. Three eggs are enough to hold it together without making the casserole taste eggy.

Cheese: If you want a creamy, savory, slightly cheesy carrot casserole, I’d choose cheddar cheese for a Southern-style casserole. Parmesan is more subtle, salty, nutty, and less obviously “cheesy.”
I like using pecans because they toast up nicely and add a little crunch.
Tips & Tricks
Drain the carrots really well before mashing: Extra water can make the casserole too loose and keep it from setting properly in the oven. You should let them sit in the colander for a few minutes, then give them a good shake before moving on.

Check the center, not just the edges, for doneness: The edges cook faster than the middle, so don’t rely on a golden top alone. Give the casserole a gentle jiggle. If the center still looks loose, give it a few more minutes.

- 1/2 cupgranulated sugar
- 3large eggs

- 1 tspbaking powder
- 1/2 tspsalt
- 1/2 tspgarlic powder
- 1/4 tspblack pepper
- 1/2 cupcheddar or Parmesan cheese (shredded)
- Topping
- 1/2 cupPanko breadcrumbs (or crushed crackers)
- 3 tbspunsalted butter (melted)
Instructions
- Make the Carrot Mixture
- 1Place carrot slices in a large pot, cover with water, and boil for 15-18 minutes until very tender. Drain well.
- 2Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish. Mash or puree the drained carrots until smooth.
- 3Mix the shredded cheese into the warm mashed carrots before adding the eggs, so it melts evenly.
- 4Stir the sugar, eggs, melted butter, heavy cream, baking powder, garlic powder, black pepper, and salt into the mashed carrots until well combined.

- 6In a separate small bowl, combine the panko breadcrumbs and 40g melted butter. Mix until it forms loose, buttery crumbs.
