Ingredients

Salad

  • 5 cups mixed salad greens (spring mix or spinach)
  • 1 ½ cups fresh strawberries, sliced
  • 3 oz goat cheese, crumbled
  • ¼ cup sliced almonds or pecans
  • ¼ small red onion, thinly sliced

Honey Balsamic Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ⅛ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Wash and dry the salad greens thoroughly. Place them in a large salad bowl.
  2. Slice the strawberries into thin pieces so they mix evenly with the greens.
  3. Thinly slice the red onion and add it to the bowl.
  4. Sprinkle the sliced almonds over the salad.
  5. Add the crumbled goat cheese evenly across the top.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth and slightly thickened.
  7. Drizzle the dressing over the salad just before serving.
